Pineapple Sweet and Sour Chicken

Yield: 4 servings

ingredients:

  • 1/4 cup olive oil
  • 2 chicken breasts, thinly sliced
  • 3 tablespoons all purpose flour
  • 3 tablespoons cornstarch
  • 1/2 cup celery, thinly sliced
  • 1/2 cup carrots, shredded or matchstick cut
  • 1/2 cup white onion, finely diced
  • 3 cloves garlic, minced
  • 1- 8 ounce can pineapple tidbits, drained and reserve juice for sauce
  • 3 tablespoons light brown sugar
  • 2 tablespoons white wine vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon ketchup
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • cooked white rice
  • sliced green onions, optional for garnish

instructions:

  1. Place chicken, flour, cornstarch, salt and pepper, in a ziploc bag, and shake until chicken is evenly coated.
  2. In a large non stick skillet, heat olive oil over medium high heat.
  3. Add coated chicken, and cook until it starts turning brown on each side and is almost cooked through.
  4. Add celery, carrot, onion, garlic and pineapple. Saute for about 5 minutes or until veggies start to soften.
  5. Combine pineapple juice, brown sugar, vinegar, soy sauce and ketchup in a bowl and stir until mixed. Set aside.
  6. Reduce heat to medium. Add the sauce to the chicken and veggie mixture and continue to cook until it thickens, about 2-3 minutes. Remove from heat.
  7. Serve over white rice and garnish with green onion.
