We spent most of the day going to garage sales and found some awesome deals! I'm such a garage sale junkie and It's definitely one of my favorite things about summer in Minnesota.

Today's recipe is perfect for the 4th of July, Memorial, Labor Day or any other patriotic event. It's super easy to make and delicious!!

After making the mascarpone cream, my brother and I realized it tastes so similar to the cream puff filling my Mom used to make when we were kids, minus the hard work that went into it.

What is in Berries with Mascarpone Cream?

  • Powdered sugar: Also known as confectioners' sugar or icing sugar. It is finely ground by milling, and is used for frostings or dusted onto food to add sweetness or decoration. You can use store bought or also make it yourself!
  • Mascarpone cheese: Mascarpone is an Italian cream cheese made from thick cream and coagulated by the addition of certain acids such as lemon juice, vinegar or citric acid. Mascarpone can be added to both sweet and savory dishes, providing a rich and creamy element. Make your own, or buy it from the grocery store!
  • Vanilla extract: this extract is made from vanilla bean pods soaked in water and alcohol. Try using pure vanilla extract instead of imitation. This is the most common extract used in American desserts and I put it in pretty much anything sweet, Use store bought or make your own here!
  • Fresh blueberries: Eating this fruit daily can improve heart health. They are low in calories, packed full of antioxidants and should be refrigerated after purchasing them.

Berries with Mascarpone Cream

Yield: 6-8 servings

Ingredients:

  • 1- 8 ounce container mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • fresh strawberries, cherries, blackberries, raspberries and/or blueberries

Instructions:

  1. Whip the mascarpone in a medium sized mixing bowl with an electric mixer.
  2. Add whipping cream, powdered sugar and vanilla. Whip until thickened.
  3. Rinse and dry berries.
  4. Layer berries and cream in single sized serving dishes.
  5. Serve immediately or cover each dish and refrigerate until serving.
