Noodles & Company Inspired Parmesan Crusted Chicken (click here to print recipe)
What you need:
2-3 large boneless, skinless chicken breasts
1/4 cup Italian bread crumbs
1/2 cup grated parmesan cheese
2 teaspoons garlic powder
Depending on the size of the chicken breasts, cut them into two or three pieces. Place each piece between two sheets of plastic wrap and flatten with a meat tenderizer until about 1/2 inch thick. Mix the bread crumbs, parmesan cheese and garlic powder. Coat chicken with breading mixture. Drizzle the bottom of a frying pan with a small amount of olive oil. Heat the pan on medium-high and then add the chicken. Brown both sides and then turn down to medium until cooked through.
