What happened to Friday's recipe, you may be wondering? Life. We were SO busy yesterday and got home late! My daughter woke up in the middle of the night with a temp and stomach ache and we found out today at the doctor, she has the flu. She is resting now and the temp's gone down, so time for Mama to get this recipe posted.

This casserole is total comfort food to me. Pizza ingredients and pasta baked in a casserole with sauce and cheese? Yes, please! I really love that this is another easy recipe to prepare and can be done within 45 minutes. Great for weekends, and still fast enough for weeknights. My kind of meal! As long as you love pizza and pasta, it will be your kind of meal too!

You can add or substitute with these ingredients:


  • use a pizza blend cheese instead of mozzarella
  • add Italian seasoning to the ground beef
  • use half alfredo sauce and half pasta sauce 
  • use canned mushrooms instead of fresh
  • use green olives instead of black
  • use half sausage and half ground beef
  • use fresh garlic instead of garlic powder
  • use regular pepperoni, cut into quarters instead of mini
  • use any shape pasta instead of rotini
  • try ham and pineapple for a Hawaiian pizza casserole

Supreme Pizza Pasta Casserole

Ingredients

  • 1 - 16 ounce box of rotini pasta
  • 2- 24 ounce jars pasta sauce
  • 1 tablespoon olive oil
  • ½ green bell pepper, diced
  • ½ medium onion, diced
  • ½ cup chopped fresh white mushrooms
  • 1 pound lean ground beef
  • 1 teaspoon garlic powder
  • 1 cup mini pepperoni
  • ½ cup sliced black olives
  • ½ cup shredded parmesan cheese
  • 2 cups shredded mozzarella cheese
  • salt and black pepper, to taste
  • 10-15 large pepperoni, sliced mushrooms, sliced olives, chopped green peppers for garnish, optional

Instructions

  1. Preheat oven to 350 degrees F. Spray a 9x13 inch pan with non-stick cooking spray.
  2. Cook pasta to al dente according to package directions. Drain and return to pan, pour an entire jar of pasta sauce over the pasta and stir to coat.
  3. Meanwhile, heat olive oil in a skillet over medium heat. Add the chopped green pepper, onion, and mushrooms. Sprinkle with a pinch of salt and saute over medium heat for about 5-10 minutes or until veggies are slightly softened.
  4. Add the ground beef and garlic powder and continue cooking over medium high heat, stirring frequently until ground beef is completely cooked and crumbled. Drain to remove any excess fat.
  5. Add ½ of a jar of pasta sauce, mini pepperoni, sliced black olives and parmesan cheese to the ground beef mixture and stir until everything is combined. Add salt and pepper, if desired.
  6. Spread the pasta evenly across the bottom of your prepared pan.
  7. Spread the meat mixture evenly across pasta.
  8. Pour the remaining half jar of pasta sauce across the top of the meat mixture and spread.
  9. Sprinkle shredded mozzarella evenly across the top.
  10. Spread pepperoni, chopped green peppers, sliced olives and sliced mushrooms across the top of the cheese, if desired.
  11. Bake for 25-30 minutes, or until cheese is completely melted.
