Lasagna is one of those comfort foods from my childhood. I always remember being super excited when my Mom made some for dinner. I'm still a lover of everything pasta now, and get just as excited when it's on my plate for dinner.

This Easy Classic Lasagna is especially good. The hot Italian sausage addition is so tasty, in fact when mixed with the sauce, cheese and noodles, it's not even spicy at all. Just full of flavor! The combo of mozzarella and ricotta is amazing, and the parmesan added on top with the mozzarella is the perfect flavor touch!


The sauce is made from Red Gold tomatoes. I love their diced tomatoes with basil, garlic and oregano! They come full of flavor, so it doesn't take much extra to make a delicious sauce! This lasagna is great served with some garlic bread and lasagna. The leftovers are fantastic too and would be great for lunch at work! Enjoy!

Easy Classic Lasagna

What you need:
1- 16 ounce box lasagna noodles
1 tablespoon olive oil
1 medium onion, diced
4 cloves garlic, minced
3 hot Italian sausage links, casings removed
1- 28 ounce can Red Gold Crushed Tomatoes
2- 14.5 ounce cans Red Gold Diced Tomatoes w/ Basil, Garlic and Oregano
1 teaspoon Italian seasoning
1- 15 ounce container ricotta cheese
3 cups shredded, mozzarella, divided
1/2 cup shredded parmesan
salt and pepper, as needed

Directions:
Preheat oven to 350 degrees.

Bring a large pot of water to a boil. Cook lasagna noodles to al dente. Do not over cook. Rinse and set aside.

In a large saucepan, heat olive oil over medium high heat. Add the onion, garlic and sausage and cook until sausage is crumbled and no longer pink. Reduce heat to medium, then add the crushed tomatoes, diced tomatoes, Italian seasoning, salt and pepper. Simmer for 10 minutes.

Combine the ricotta cheese and 2 cups of mozzarella in a bowl. Add a scoop of sauce to the bottom of a 9x13 baking dish and spread evenly. Lay 4 lasagna noodles on the bottom of the pan, overlapping slightly. Spread some ricotta and mozzarella mixture on the noodles, then scoop sauce evenly over the cheese. Repeat until you reach the top of the pan. Pour additional sauce over the top, spread evenly, then sprinkle with the remaining mozzarella and parmesan. (You may have a few noodles left)

Bake uncovered for 30-40 minutes, until sauce is bubbling and cheese starts to brown. Remove from oven, let rest for 5 minutes, then serve!
