So simple and on the table in 30 minutes! This recipe will fill your belly and warm you right up!
This super easy soup may not sound like much, but the flavor is so wonderful and totally comforting. I remember our mom making this with fresh red potatoes and peas straight out of the garden. Wow, that was amazing. I highly recommend that if you have a garden or access to a farmer's market!
Peas and Potato Soup
What you need:
5 lbs red potatoes, peeled and cubed
1 bag of frozen baby/young peas (I used a 14.4 oz bag)
1 stick of butter
Boil potatoes until just tender. Drain the potatoes. Prepare peas according to package and add to the cooked potatoes. Add one stick of butter. Add milk until potatoes and peas are nearly covered. Heat until butter is melted and milk is heated through without boiling. Serve and enjoy!
Side note: I love mine with some American cheese in it. See the iPhone picture below.... yummy goodness!
