Have I ever explained how much I love muffins? They are perfect for the non baker like me. Stick with one base recipe, and add in pretty much any fruit, chips or nuts and end up with breakfast or snack for the family for the next couple days. They're pretty hard to mess up, and bake up fast, which is great! 

My base recipe came from my Junior High home ec class! Would you believe I still have the original paper with the recipe in my recipe stash? Craziness! Not sure why I ever kept it, but I'm so glad I did! They really couldn't be more easy to make!

This time around I decided to add in some blueberries and banana! We had a snowstorm last week and were stuck in the house for the day, so I added in what we had since we weren't venturing out. We went from a ton of snow last week, to temps in the 50's and 60's this week. Yep, that's MN for you. Drastic weather changes all in one week!

 This is probably one of my favorite flavor combos to date! Blueberries and bananas go so well together! These blueberries were huge, so there weren't that many in each muffin, but it was a delicious bite when you did come across one! I hope you enjoy as much as we did!

Blueberry Banana Muffins

Ingredients (12 muffins)
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup oil
  • 1/3 cup blueberries
  • 1 mashed banana
Instructions
Preheat oven to 400 degrees. Place paper muffin cups in muffin tin.
In a bowl, combine flour, sugar, salt and baking powder. In a separate bowl, beat egg slightly with a fork. Add the milk and oil to egg and mix to combine.
Add the liquid mixture to the dry mixture and stir just enough for batter to combine. Then stir in the blueberries and mashed banana. Do not over mix.
Fill each muffin cup about 2/3 full and bake for 20 minutes, until muffins are cooked through. Remove from oven and cool.

  2. You have to keep a good muffin recipe from Home Ec class, especially since I doubt most schools offer that option anymore! I'll never forget the cream puff recipe from my class ;)
