Caesar Salmon Sandwich Recipe

Tasty and easy to make sandwich that's perfect for lunch or picnics!



Whenever springtime rolls around, I'm all about sandwiches, salads and anything fruity! Quick and easy meals are always on the agenda, so we can spend more time outside! Living in Minnesota, after the cold brutal winters, we tend to kick into high gear from May to October. Schedules are full of BBQ's, picnics, camping, swimming at the lake and everything else in between. So much fun!

Those are the times when sandwiches come in handy! This one is especially easy and so delicious! You can prep ahead of time for lunches and picnics, or whip it up for a quick dinner on the fly. If you love casear salad, then you'll love this recipe!

I buy the single serve pouches of salmon at my local Dollar Tree, they are the perfect amount for one sandwich. Choose any bread of your choice, then the caesar salad ingredients with the salmon and you have a gourmet sandwich for a fraction of deli prices! Even better, you made it at home, and you know it's fresh! Totally my kind of meal, especially when it's delicious! What are your favorite sandwiches to make at home?


Caesar Salmon Sandwich

Ingredients (1 sandwich)
  • 1- 2.1 ounce package salmon
  • 1 tablespoon onion, diced
  • 1 tablespoon shaved parmesan cheese
  • 1 1/2 tablespoons caesar dressing
  • salt and pepper, to taste
  • 2 slices bread
  • romaine lettuce
  • sliced tomatoes
Instructions
In a bowl, combine salmon, onion, parmesan, caesar, salt and pepper.
Layer lettuce, salmon mixture and tomatoes on a piece of bread, topping with other piece of bread. Serve immediately.
