A few weeks ago, I spent a lovely weekend with my sister! What do we always do when we hang out? Cook and bake, of course! 

My Dad sent a huge bag of rhubarb with us and we had to bake a rhubarb cake!

My sister tried this recipe from a friend last summer and loved it. I chopped up all the rhubarb, she mixed up the cake and an hour later we had ourselves some dessert!

Rhubarb is SO plentiful and grows so well in Minnesota. I have 3 plants in my backyard and it produces more rhubarb that one family could possibly use.

My plant has mostly green stalks with a touch of red, which tends to be more sour than the all red stalks. That makes it perfect for this cake.

Rhubarb is technically a vegetable, but is mostly used as a fruit when cooking or baking. Make sure you discard the leaves though when you pick rhubarb, they are poisonous.

This cake turned out so delicious!

The crunchy brown sugar topping is to die for and the cake itself is moist and flavorful! I just love all the rhubarb in each bite too. Those sweet and sour flavors are perfect.

I love the moments me and my sisters spend cooking and baking together! 

My younger sister cooked us a Croatian feast last weekend with all the food she brought back from her trip to Croatia! It was SO amazing! 

The truffle pasta she made was my favorite! I really love truffle everything though.

I can't wait to travel to Croatia someday and experience their food culture!

Brown Sugar Topped Rhubarb Cake

Yield: 1- 9x13 cake

ingredients:

  • 2 cups granulated sugar
  • 2 cups heavy whipping cream
  • 2 large eggs
  • 2 teaspoons vanilla
  • 3 cups all purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 cups rhubarb, sliced
  • 2/3 cup light brown sugar

instructions:

  1. Preheat oven to 350 degrees. Grease a 9x13 glass baking dish.
  2. In a bowl, whisk together the sugar, cream, eggs and vanilla. Set aside.
  3. In a separate bowl, combine the flour, baking soda and salt.
  4. Pour the wet ingredients into the dry and mix until combined. Mix in the rhubarb.
  5. Pour batter into the greased baking dish. Sprinkle the brown sugar over top.
  6. Bake for 45-50 minutes, until set. Cool, then serve.

    1. Can you use milk and not cream

    2. The fat content and thickness are very different in milk and cream. You'd have to use 2 parts milk to 1 part melted butter, stirred together and added with the remaining wet ingredients to end up with the same consistency in the cake after baking. I would not recommend using just milk, but if you decide to try it, let us know how it turns out. Thanks for commenting!
