Quick and easy meal idea that's great for weeknights! A fun twist on traditional Chicken Parmesan! Chicken Parmesan Zucchini Boats Recipe from Hot Eats and Cool Reads!

We've been back in school for a couple weeks now, and our weeknights are busy as ever with school related activities and homework! Nights like these call for easy meals and I have a perfect easy meal recipe for you today! Chicken Parmesan Zucchini Boats!

What makes this meal especially easy, you ask? I used Tyson® Grilled and Ready® Chicken Breast Strips as a shortcut instead of spending the extra time cooking chicken breasts. They are SO tasty!

Tyson® Grilled and Ready® Chicken Breast Strips are 100% all natural and made with all white meat, 97% fat free, fully cooked and a great effortless way to make healthy, home cooked meals!

I was at Walmart doing my usual grocery shopping and stumbled upon a freezer full of Tyson products!

In addition to the Tyson® Grilled and Ready® Chicken Breast Strips, I also discovered Tyson® Crispy Chicken Strips,  Tyson® Fun Nuggets and Tyson® Any′tizers®! Make sure to check them out the next time you're shopping at you're local Walmart!

I also really love the Tyson Project A+™ program! Have you heard of this before? It's one of the simplest ways to support your school! For every label submitted from participating packages, Tyson® will give your school cash, and they can spend it on any supplies needed! Very cool, right? I know all of our schools can use some extra spending money and this is a great way to help them out.We have a jar on the kitchen counter just for saving Tyson Project A+™ labels!

Before I left the house this morning, I put the Tyson® Grilled and Ready® Chicken Breast Strips in the fridge. They were thawed by the time I got home from work, and I started prep on the rest of the ingredients! This meal is ready in under 30 minutes and the flavors are mouthwatering! Kids love this meal because it mimics the flavors of spaghetti and pizza, and it's so good for you using the zucchini as the boat to hold everything! You'll want to add this to your regular recipe rotation! Enjoy!
