We've been experimenting with different foods to bring in my daughter's school lunch everyday. Since she loves rice pudding, we decided to whip up a batch with the Pumpkin Pie Spice Creamer to send with her for lunch! It's such an easy recipe to prep, especially if you have leftover white rice and the time spent baking them in the oven warms up the house on a cool fall or winter day. Pumpkin flavors get me in the mood for holiday baking and I can't wait to spend more time in the kitchen with my daughter making memories while trying out new fall recipes!

Rice pudding baking in the oven totally reminds me of my childhood. My siblings and I would get so excited when Mom decided to make a batch of rice pudding! It never lasted long, but it was always SO good.

Most of my greatest childhood memories were times that we spent in the kitchen with my Mom. She was always canning or cooking something from scratch and I'm sure that's where my love for food and cooking started. So glad I can share my version of her recipe with you today! Make it for dessert on Thanksgiving, or even Sunday dinner! It's really perfect for any special occasion!



Individual Pumpkin Pie Spice Rice Puddings

Ingredients (4 individual servings)
  • 2 cups cooked white rice, cooled
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 3 tablespoons sugar
  • 1/2 cup milk
  • 1 1/2 cups International Delight Pumpkin Pie Spice Liquid Creamer
  • 1/2 teaspoon pumpkin pie spice
Instructions
Preheat oven to 350 degrees.
Scoop 1/2 cup cooked rice into 4 individual baking dishes.
In a large bowl, whisk together the eggs, salt, vanilla, sugar, milk, creamer and pumpkin pie spice until combined.
Pour over rice, distributing custard evenly between the four baking dishes.
Place in oven and bake for 45-50 minutes, until set. Remove from oven and cool slightly before serving. Top with whipped cream, if desired. Refrigerate leftovers.
