Happy Monday everyone!

I'm back after a fantastic weekend! I had a mini getaway in Minneapolis for a friend's birthday and we stayed at The Grand Hotel! This hotel is quite gorgeous! The building itself is over 100 years old and has so much charm and character! Every floor has an old school mail slot that goes down to the mailbox on the 1st floor! I just love buildings like this!

 

We also grabbed a bite to eat at Fogo De Chao! If you've never been before, it's definitely a must try! It's a little on the spendy side, but perfect for a special occasion! The food is to die for, and the experience is fun. Fogo is a Brazilian Steakhouse. In addition to the swanky salad bar and sides, the waiters bring around 17 different kinds of meat for you to try! I really loved the parmesan pork loin, garlic steak, and chicken wings! So juicy and flavorful! We ended the night with some drinks and dancing at Aqua Nightclub and the whole birthday celebration was a blast!

Today's recipe is the total opposite of the food I sampled this weekend. This recipe is pure Minnesota comfort food. Wild rice is harvested right here in Minnesota and it's something I grew up eating. We always had some wild rice soup or wild rice hotdish for our winter meals.

This skillet is a great way to use leftover wild rice, making it a 30 minute meal! The rice is  combined with ground beef, mushrooms, peas and alfredo sauce. It's amazing right off the stove and is also great for a leftovers lunch the next day. Definitely a must try!

Ground Beef and Wild Rice Alfredo Skillet

Ingredients (4 servings)
  • 1 pound lean ground beef
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup fresh white mushrooms, sliced
  • 1 cup cooked wild rice
  • 1 cup frozen peas, thawed
  • 1- 14.5 ounce jar alfredo sauce
  • 1/2 teaspoon dried basil
  • salt and pepper, if needed
Instructions
In a large skillet, combine ground beef, onion and garlic. Cook over medium high heat for 2-3 minutes, breaking ground beef into small pieces. Add mushrooms and continue cooking until ground beef is no longer pink.
Reduce heat then add wild rice, peas, alfredo, basil and salt and pepper, if needed. Simmer over low for 5-7 minutes, until heated through. Serve immediately.
