It's been awhile since I've posted a breakfast recipe! Not sure why since I absolutely love me some breakfast.

I was super motivated last weekend! I woke up my daughter, got her in the kitchen with me, baked a fruity coffee cake (coming soon) and whipped up some of this amazing breakfast hash!

I'm on my second year of an Americorps VISTA service at a local family and youth non-profit and we got a phone call that a farmer had some extra potatoes to give away.

My co-worker Shannon and I jumped in the car and drove over to the farm! We pulled in and saw a HUGE farm wagon full of potatoes and ended up getting some for our families and also ourselves!

I now have an abundance of potatoes at home and this hash was the perfect thing to start using them!

I recently discovered Gold'n Plump's new chicken sausages at the grocery store and decided to use them with all the veggies! You can use breakfast sausage too, it's great with whatever you have on hand.

This hash turned out so tasty! The veggies are nicely browned giving them an amazing flavor and with eggs on the side it's filling and hearty.

The whole family loved it and I can see it on our dinner menu sometime soon too!

Potato, Sausage and Mushroom Fried Breakfast Hash

Ingredients (4 servings)
Instructions
Add olive oil and butter to a large skillet over medium high heat.

Once butter is melted, add potatoes, onion, green pepper, mushrooms and sausage.

Season with salt, parsley and pepper.

Cook, stirring frequently about 6-8 minutes.

Reduce heat to medium, stirring frequently until browned and potatoes are cooked through, about another 6-8 minutes.

Serve with an over easy egg on top of hash, or scrambled eggs on the side.
