I have such a wonderful comfort food recipe to share with you today!

This meal is great for Sunday dinner when served with a salad and some garlic bread, but also easy enough for weeknights too!

Last Sunday I made this beef roast in the slow cooker and had a ton of beef leftover. After some brainstorming I decided to turn some of that beef into some tasty stuffed shells along with my favorite, beef roast hash!

One meal turned into three for our family, making that spendy beef roast more budget friendly!

After slicing the beef roast thinly and cubing it up, it made the perfect filling along with some fresh herbs and cheese.

I opted to use jarred pasta sauce for this recipe, but if you have homemade, that would be even more wonderful!

We saved some leftover shells for lunch the next day, but this meal would also be very freezer friendly. Assemble ahead of time, then bake when needed!

Saucy Beef and Cheese Stuffed Jumbo Shells

Ingredients (4 servings)
  • 12 jumbo pasta shells
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 1/4 cup leftover cooked beef roast, steak or ground beef
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 cups shredded mozzarella cheese, divided
  • 1 24 ounce jar marinara sauce, divided
  • salt and pepper
  • parmesan cheese, for topping
Instructions
Pre-heat oven to 375 degrees.

Cook pasta shells according to al dente package directions. Do not over cook. Drain, rinse and set aside.

In a medium saute pan, heat olive oil over medium heat. Add the onion, garlic and a pinch of salt and pepper. Saute for 5 minutes and remove from heat.

In a bowl, combine the cooked onion and garlic, beef, basil, parsley, one cup mozzarella, 1/4 cup pasta sauce and a pinch of salt and pepper.

Spoon enough sauce to cover the bottom of an 8x8 inch baking dish, then stuff each shell with the beef mixture lining them up in the baking dish.

Pour the remaining sauce over top then sprinkle with the remaining one cup mozzarella cheese.

Bake for 30 minutes. Remove from oven and serve sprinkled with parmesan cheese.
