These Brown Sugar Ham and Cheese Sliders are the ultimate crowd pleasing snack, appetizer or easy weeknight dinner! Made with soft Hawaiian rolls, layers of melty Swiss cheese, and sweet, savory brown sugar ham, they’re brushed with a buttery Dijon glaze packed with poppy seeds and minced onion for irresistible flavor in every bite. The combination of the tender rolls, creamy mayo, gooey cheese, and caramelized glaze makes these sliders totally crave worthy.

Perfect for potlucks, holidays, game day, or even lunch, they come together quickly and bake all at once in a single pan. The sweet rolls balance perfectly with the brown sugar ham and tangy mustard butter topping. Serve them warm and gooey straight from the oven. They’re guaranteed to disappear fast!

Recipe tips and substitution ideas:


  • Swap the Swiss cheese for provolone, cheddar, mozzarella, or pepper jack to change up the flavor. Instead of ham, you can use deli turkey, roast beef, or chicken—whatever you have on hand. If you don’t have Hawaiian rolls, try using soft dinner rolls, brioche buns, or even mini croissants for a buttery twist.
  • Mayo can be replaced with mustard, garlic aioli, or even a light layer of cream cheese. You can also adjust the glaze by adding brown sugar, a splash of honey or maple syrup for extra sweetness, or mix in a bit of hot sauce or crushed red pepper if you like a little heat.
  • Leftovers can be reheated in the oven or air fryer for best texture.

Brown Sugar Ham and Cheese Sliders

Ingredients

  • 12 Hawaiian rolls
  • ¼ cup mayonnaise
  • 12 slices Swiss cheese
  • ½ pound thinly sliced brown sugar ham
  • 4 tablespoons butter, melted
  • 1 tablespoon Dijon mustard
  • 1 tablespoon dried minced onion
  • 1 tablespoon poppy seeds

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice the Hawaiian rolls in half horizontally and place the bottom half in a 9x13-inch baking dish.
  3. Spread half of the mayonnaise evenly over the cut side of the bottom buns.
  4. Layer half of the Swiss cheese, all of the ham, then the remaining Swiss cheese over the buns.
  5. Spread the remaining mayo and place the top half of the buns over the cheese.
  6. In a small bowl, mix together the melted butter, Dijon mustard, minced onion, and poppy seeds.
  7. Brush the butter mixture generously over the tops of the sliders.
  8. Cover the baking dish with aluminum foil and bake for 15 minutes.
  9. Remove the foil and bake for an additional 5–10 minutes, or until the tops are golden brown and slightly crispy.
  10. Let cool for a few minutes before slicing and serving.
