Everyone who knows me well, knows I am a huge fan of fish and seafood. Salmon happens to be one of my favorites, so when Morey's Fine Fish & Seafood sent me their Fish Creations Lemon Parmesan Atlantic Salmon, I was super excited to try it out and share with you! Morey's is a well known name around central Minnesota! Most people pass by their plant in Motley, Minnesota on their way up to the cabin or some other "up north" destination. They've always been known for their great quality fish and seafood.
These salmon fillets can be found in the freezer section in the grocery store, and they come individually wrapped, making it easy for single servings. There are 2 fillets in the 10 ounce package and they are gluten free. The package includes instructions for grilling, baking or even microwaving. We used the oven preparation method and the fillets were perfectly baked.
They thaw fast for a last minute dinner idea, and the lemon parmesan marinade has amazing flavor. Bake them with the marinade on top and served with a side, or you can make them into a totally different creation like I did.
That's how these Lemon Parmesan Salmon Burgers with Green Onion Mayo were created! I love me a good salmon burger. When using leftover salmon, dinner can be ready in about 10 minutes, which is perfect for any weeknight. The green onion mayo is a tasty topping for the burger, along with some romaine lettuce. I also toasted the buns, which I love. It adds a little extra crunchiness.
Morey's Fish Creations Lemon Parmesan Atlantic Salmon is something we'd definitely purchase in the future. I absolutely love that you don't even have to season it, and that it's ready in a snap. Totally my kind of meal!

Lemon Parmesan Salmon Burgers with Green Onion Mayo (click here to print)
3-4 burgers
What you need:
1- 10 ounce package Morey's Fish Creations Lemon Parmesan Atlantic Salmon, thawed
2 tablespoons onion, finely diced
2 tablespoons mayo
1 teaspoon hot sauce
1/4 cup panko breadcrumbs
salt and pepper
sauce:
1/2 cup mayo
2 teaspoons hot sauce
1/2 teaspoon honey
2 green onions, sliced
black pepper
olive oil
buns
lettuce
Directions:
Place Morey's Lemon Parmesan Atlantic Salmon in a glass baking dish and pour excess marinade over top. Bake according to package directions. Remove from oven and flake with a fork.
Meanwhile, combine all sauce ingredients and refrigerate until serving. Also, toast the buns under the broiler until toasted.
In a bowl, combine flaked salmon, onion, mayo, hot sauce, panko, salt and pepper until just mixed. Set aside for 10 minutes, then form into 3-4 patties.
Drizzle some olive oil in a skillet, and heat over medium high heat. Place salmon patties in the skillet and cook about 3-4 minutes per side, until golden brown.
Place salmon burger on the toasted bun and top with green onion mayo. Serve immediately.
