As soon as the weather starts cooling down, I find myself craving all of those warm, cozy dinners that remind me of the holidays, and this Turkey and Stuffing Casserole has become one of our family favorites for fall. We absolutely love stuffing in our house, so anytime I can turn it into an easy weeknight dinner, I know it's going to be a hit! I also love that this casserole gives us all those comforting Thanksgiving flavors without having to make an entire holiday meal.

Tender shredded turkey is baked in a creamy herb sauce with celery, onion, garlic, sweet dried cranberries, and melty white cheddar cheese, then everything gets topped with buttery stuffing that turns perfectly golden and crispy in the oven. I especially love making this recipe when we have leftover turkey after Thanksgiving because it turns those leftovers into something completely different that we're actually excited to eat again. But we definitely don't wait until Thanksgiving to make it! I make this throughout the fall and winter whenever we're craving a hearty comfort food dinner, and if we're lucky enough to have leftovers, they're just as delicious reheated for lunch the next day.

Recipe tips:


  • For the best flavor and texture, use freshly shredded white cheddar cheese, since it melts more smoothly than pre shredded cheese. Be sure to moisten the stuffing evenly with the broth and butter so you don't end up with overly dry spots, and broil the casserole for the last 1-2 minutes if you like an extra golden, crispy topping. 
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave, or cover the casserole with foil and warm it in the oven at 350°F until heated through; remove the foil for the last few minutes to help crisp the stuffing again.


Swaps and additions:


  • You can also add diced or shredded carrots for extra veggies, or mix in fresh herbs such as sage, thyme, rosemary, or parsley for even more fall flavor. Chicken broth can be replaced with turkey or vegetable broth, depending on what you have available. Use rotisserie chicken instead of turkey.

Turkey and Stuffing Casserole

This easy Turkey and Stuffing Casserole brings all your favorite holiday flavors together in one warm and comforting dish. Creamy turkey filling, sweet cranberries, melty cheese, and golden stuffing make every bite delicious.

Ingredients

  • 4 cups of shredded cooked turkey
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 cup shredded white cheddar cheese
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 1/2 cup dried cranberries
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon black pepper
  • 1 (6 ounce) box chicken stuffing mix
  • 1 1/2 cups chicken broth
  • 4 tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9x13 inch baking dish with nonstick cooking spray.
  2. In a large mixing bowl, combine the shredded turkey, cream of chicken soup, sour cream, ½ cup chicken broth, white cheddar cheese, celery, onion, garlic, sage, poultry seasoning, black pepper, and dried cranberries. Stir until everything is evenly combined and coated.
  3. Spread the chicken mixture evenly into the prepared baking dish.
  4. In a separate bowl, combine the stuffing mix, remaining 1½ cups chicken broth, and melted butter. Toss until the stuffing is evenly moistened, then let it sit for about 2 minutes to absorb the liquid.
  5. Sprinkle the stuffing mixture evenly over the turkey, covering the entire casserole.
  6. Bake uncovered for 35-40 minutes, or until the casserole is hot and bubbly and the stuffing is golden brown.
  7. For an extra crispy topping, broil the casserole for 1-2 minutes before serving, watching carefully to prevent burning.
  8. Garnish with fresh parsley, if desired, and serve warm.
