Hey everyone!! I hope you had a wonderful Labor Day weekend!! I got started on some packing and spent some time with my bestie for her son's birthday. It was such a peaceful and relaxing weekend.
Today's recipe is for a delicious Ham, Mushroom & Swiss Breakfast Sandwich. This sandwich would be a great breakfast, or weeknight dinner! Quick and easy. The mushrooms and swiss are a perfect and flavorful topping for the ham and egg.
I am quite obsessed with homemade mcmuffins and this was one of my favorite variations so far. My other favorite can be found here. It's called "The Ultimate McMuffin" and has some turkey and avocado! Yum!

Ham, Mushroom and Swiss Breakfast Sandwich (click here to print recipe)
What you need:
1 tablespoon butter, divided
3/4 cup fresh white mushrooms, sliced
1 slice swiss cheese
1 slice deli ham or Canadian bacon
1 Bay's English muffin, toasted
salt and pepper, as desired
In a small nonstick saute pan, melt 1/2 tablespoon butter over medium heat. Add mushrooms, salt and pepper and saute for about 5 minutes, until tender. Place the slice of cheese on top of the mushrooms, and cook for 1 more minute. Remove mushrooms from pan and set aside. On one side of the saute pan, melt remaining 1/2 tablespoon butter, and cook the egg how you prefer, seasoning with salt and pepper. (I like mine over hard. Scrambled or over easy works great too.) While the egg is cooking, warm the ham or Canadian bacon on the other side of the saute pan.
Place egg on the bottom of the toasted English muffin, topping with ham, then mushrooms and cheese. Top with remaining half of the English muffin.
