I'm seriously addicted to baby heirloom tomatoes right now. Sam's Club has them available all the time in a 2 pound bowl, and we pretty much always have them on hand these days. They're about as close to summer tomatoes you can get this time of year in MN, and they're so perfect for snacking or fun and delicious recipes!

They were definitely the inspiration for this recipe, along with the fresh basil in the fridge! I love all things caprese, so what better than to try making some Caprese French Fries? They turned out amazing, and for how simple and easy this recipe is, it's darn near a perfect 10 for me! I also love some balsamic, so keeping it traditional by topping it off with balsamic reduction was the way to go!

This can be ready in about 25 minutes with baking the fries, and you can make as little or big batch as you like! This would be a great appetizer to serve for a crowd, or a lunch like I had. Enjoy!

Caprese French Fries with Balsamic Reduction

Ingredients (2 servings)
  • 8 ounces french fries
  • 1/2 cup shredded mozzarella
  • 3-4 baby heirloom tomatoes, quartered
  • 2-3 basil leaves, chopped
  • 3 tablespoons balsamic vinegar
Instructions
Preheat oven and bake fries according to package directions. Remove from oven, sprinkle with mozzarella, then broil for 2-3 minutes until cheese is melted.
Meanwhile, simmer balsamic over medium heat until it's reduced by half.
Transfer fries with melted cheese to a serving platter, Top with tomatoes and basil, then drizzle with balsamic reduction. Serve immediately.
