These no bake cookies are sweet, crunchy, and completely irresistible! The candy melts add creamy sweetness while the chow mein noodles give that perfect satisfying crunch. Plus, this recipe is a great way to sneak in a little learning, measuring ingredients, reading directions, and understanding kitchen safety all turn into fun hands on lessons while you create in the kitchen together!

Recipe tips and substitution ideas:


  • You can make these cookies as big or as little as you like! The chocolate will dry and hold it all together regardless. 
  • If you can’t get vibrant green candy melts, you can always get a bright green oil based food dye and just use white chocolate or almond bark with the dye. You can also use a different shade of green, if all else fails.
  • If you can’t find large red heart sprinkles, any heart candy will do. You can even just draw them on with red frosting in a piping bag.
  • If your chocolate seems chunky coming out of the microwave, just work the coconut oil into it and it may need extra. Adding the noodles to it will help as well.
  • You can easily switch up these Grinch Haystack Cookies with a few fun substitutions. Use any color of candy melts and sprinkles to match different holidays or party themes, think pink for Valentine’s Day, orange for Halloween, or pastel colors for Easter. For a little extra texture and sweetness, substitute some of the chow mein noodles with mini marshmallows. If you prefer a sweet and salty combo, swap part of the noodles for peanuts instead.

Grinch Haystack Cookies

Ingredients

  • 10 Ounces Chow Mein Noodles
  • 12 Ounce Bag Vibrant Green Candy Melts
  • 1 Tablespoon Coconut Oil
  • Large Red Heart Sprinkles

Instructions

  1. Line a standard baking sheet with parchment paper.
  2. Place the candy melts in a large mixing bowl and microwave for 3 minutes, stirring every 30 seconds.
  3. Once they’re smooth and creamy, add the coconut oil to the melted chocolate and mix until combined.
  4. Add the chow mein noodles to the chocolate and gently fold them in until they’re full coated.
  5. Spoon the mixture onto the prepared baking sheets into small haystacks, about 1/4 cup.
  6. Immediately place a large red heart sprinkle on the top middle of each cookie and place the cookies in the fridge to chill for about 10 minutes or until hardened.
