Slow cooker recipes don't end up on my menu very often. Not sure why I don't make them, but I'm usually just a "make a meal when I get home" type of girl! So glad I had some pork ribs in the freezer, so I could make and share this recipe with you today!
This recipe is so easy and so flavorful. You can throw the meat in the slow cooker all day and make the sauce just before you're ready to eat. We served it with rice, but it would go well with so many sides. I just love the flavor the blackberries and balsamic combined in the sauce, and the leftover sauce, if you have any, would be great made into a dressing for a salad.
Slow Cooker Pork Ribs with Blackberry Balsamic Sauce (print recipe)
What you need:
1 1/2- 2 pounds boneless pork ribs
onion powder
garlic salt
black pepper
1 cup chicken broth
sauce:
1/4 cup sugar
1/4 cup balsamic vinegar
2 tablespoons soy sauce
3/4 cup fresh blackberries
1 tablespoon cornstarch
1/4 cup warm water
Directions:
Season pork ribs with onion powder, garlic salt and black pepper. Place ribs in slow cooker and add chicken broth. Cook on low for 6 hours, or on high for 4 hours. Use two forks and pull meat apart slightly.
In a saucepan, combine sugar, vinegar, soy sauce and blackberries. Cook over medium heat for about 5-7 minutes, breaking apart blackberries into smaller pieces while cooking.
Combine cornstarch and warm water. Add to sauce mixture. Continue cooking for another 2-3 minutes until sauce thickens. Serve over slow cooked pork.
