For my daughter's 5th birthday party, we decided to have an Italian theme for the food. This salad recipe was a great addition to the Chicken Alfredo, Spaghetti and Garlic Monkey Bread! The sweetness of the strawberries added in was amazing! You could also add thinly sliced red onions to change the flavor. I really loved it and the bowl was empty by the end of the party! This recipe does make a large bowl, so you can always cut it in half for a smaller crowd.
What you need:
3 English Cucumbers, peeled, halved and sliced
1 pound Campari Tomatoes, quartered
1 pound strawberries, sliced
1 c. Balsamic Vinaigrette
Pepper
In a large bowl, gently mix all ingredients. Refrigerate for 1 hour prior to serving! Enjoy!!
