I was super excited when my cousin gave me a large bag of fresh red potatoes last week. I'm a huge fan of my traditional potato salad recipe, but wanted to do something different from the usual. I happened to have all of the ingredients on hand for loaded baked potatoes, so why not turn it into a cold potato salad. This salad is delicious!! The bacon adds a nice salty flavor and the sauce pull all of the ingredients together. I would definitely make this for my next family get together! Enjoy!!
Loaded Baked Potato Salad (print recipe)
What you need:
1 pound red potatoes, peeled and cut into bite sized pieces
3/4 cup cooked bacon, crumbled
1 cup shredded cheddar cheese
3/4 cup green onion, sliced
Sauce:
1 cup light sour cream
1 cup light ranch dressing
1/2 cup mayo
1 tablespoon sugar
pepper
Directions:
Place potatoes in a large pot and cover with salted water. Cover and bring to a boil over high heat. Reduce the heat to medium low and simmer until tender, about 20 minutes. Drain and run under water until cool.
Combine sour cream, ranch, mayo, sugar and pepper in a small bowl. Put the potatoes, bacon, cheddar and green onion in a larger bowl, pour sauce over the top, and gently fold sauce in until well combined. Refrigerate for at least 1 hour before serving.
