I hope you had a wonderful weekend!! My daughter and I traveled to Wisconsin to visit a friend of mine. We had a fun and relaxing weekend, which was much needed!
Today's recipe is another one that takes advantage of the yummy awesomeness of fall apple cider! Have you ever used it to make gravy??
If not, here is the perfect recipe that you'll want to try! It has a slight sweetness, but not too much to overpower the dish. It's the perfect sweet and savory combo in my opinion! We loved it and hope you do too! Enjoy!
Pan Fried Chicken Breasts with Apple Cider Gravy (click here to print recipe)
What you need:
1 tablespoon butter
1 tablespoon olive oil
3 chicken breasts, flattened or 6 chicken breast tenderloins
3/4 cup chicken broth
3/4 cup fresh apple cider
1/2 tablespoon dried parsley
1 clove garlic, smashed
salt and pepper
cornstarch and water slurry, to thicken
garlic mashed potatoes
Season the chicken breasts with salt and pepper.
In a large skillet, heat butter and olive oil over medium high heat.
Add the chicken breasts, and brown on each side for about 4-5 minutes, or until cooked through. Remove chicken from the skillet and set aside.
Add the broth, apple cider, parsley, and garlic to the skillet. Bring to a boil, and scrape the browned bits off the bottom of the skillet. Stir in cornstarch slurry, reduce heat to medium and cook until thickened. Season with salt and pepper, as needed. Add chicken back to the skillet and remove from heat. Serve over mashed potatoes or rice.
