Not sure about you, but breakfast is my absolute favorite meal! My daughter is a HUGE pancake fan and when she was recovering from the flu last weekend, she had one request. Could I make pancakes for her?

Since we were stuck in the house with no pancake mix, I had to find a recipe to make some pancakes from scratch for her!

This recipe came from a cookbook that's been on my bookshelf for awhile. There are SO many great recipes in it. It's called Always on Sunday by Eleanor Ostman. It's a local, Minnesota cookbook with recipes from all over the place! LOVE!

This recipe is just as easy to prepare as the boxed stuff and even better... you know what ingredients are in it! Better for you and cheaper too! It's a win-win all around! If you're a fan of waffles and want a homemade recipe, these Sweet Cream Waffles are fantastic!

What's in homemade pancakes?


  • Milk: cow's milk is a great source of calcium, vitamin D, potassium and it's a complete protein source too! 
  • All purpose flour: It's a combination of hard and soft wheats. Bleached flour provides a softer texture. It's versatile and you can bake most anything with it!
  • Granulated sugar: Also known as white sugar, table sugar or regular sugar. It's grainy, common and used in many types of recipes.
  • Baking powder: It's a dry leavening agent, with a shelf life about 9-12 months. Baking powder is used to increase the volume and lighten the texture of baked goods by causing bubbles in a wet mixture. Baking powder is usually made with a combination of baking soda, cream of tartar and cornstarch.

Easy Homemade From Scratch Pancakes

Yield: 12 small pancakes

Ingredients

  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 egg
  • 1 cup all purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 2 teaspoons baking powder

Instructions

  1. In a bowl, whisk together the milk, oil and egg.
  2. Combine the dry ingredients and add to the egg mixture. Whisk until the batter is smooth.
  3. Grease a skillet or griddle and heat over medium.
  4. Scoop the batter onto the skillet using 1/4 cup for each pancake.
  5. Heat until pancake bubbles and flip, about 2-3 minutes for each side, until lightly golden brown. 

Notes:

If your pancake batter is thin, check your baking powder. Even if it isn't expired but has been open awhile, it can affect the thickness of the batter. You can increase the flour by 1-2 tablespoons to make your batter thicker, or try again with new baking powder.

  8. We've been making these for years and they are fabulous. Two hints - you can replace half or all the oil with applesauce [healthier] and using self rising flour in place of all purpose makes the as fluffy as IHOP [or my grandma's] which is what I judge all pancakes against. Additionally you can halve the white flour [AP or SR] with wheat - hardly changes the tastes and even healthier.

  11. Awesome recipe! Loved it. Super easy for on the go. I just pre mix the dry ingredients and then add in the wet when cooking them. Just like you would with a pancake mix. Again Great recipe. ★★★★★
