This glazed fruit salad is made with instant pudding, fresh and canned fruit and lemon zest. 

My stepmom served something like this years ago at a holiday brunch. I made a few tweaks and now this salad is one that everyone loves.

It's great for barbecues, picnics, parties, holidays and more. It's also good for school or work lunch and holds up in the lunchbox nicely.

This recipe is a crowd pleaser and family favorite!

Lemon Vanilla Pudding Fruit Salad

Ingredients

  • 1 - 20 ounce can of pineapple chunks with juice
  • 1- 3.4 ounce box of instant vanilla pudding
  • 1 - 15 ounce can mandarin oranges, drained
  • 1 pound fresh strawberries, sliced
  • 2 cups halved grapes
  • 1 teaspoon lemon zest
  • Additional lemon zest for garnish, optional

Instructions

  1. In a large bowl, add the pineapple chunks with juice and vanilla pudding mix. Stir until pudding mix is combined with the pineapple.
  2. Add the drained mandarin oranges, strawberries, grapes and lemon zest. Stir gently to combine.
  3. Cover and refrigerate for one hour prior to serving.

Notes

Refrigerate leftovers in an airtight container for up to two days.
