Blueberry Pie Bars Recipe from Hot Eats and Cool Reads! A tasty dessert that's great for bake sales, picnics, parties and of course, after dinner! Also delicious with cherries, raspberries, blackberries or strawberries!

I got a fantastic deal on some blueberries at Trader Joe's a couple weeks ago and needed to find a recipe to use them in.

After browsing Pinterest for awhile, I stumbled on this recipe and I knew it would be the perfect one to try! I just love how these bars turned out.

They have just enough sweetness and the filling goes great with the crust. These would be a great dessert for picnics or BBQ's in the summer, or for dinner and family gatherings during the winter.

You could also substitute any berry depending on what you have, or what's on sale!

Blueberry Pie Bars

by Sheena
  • Crust and Topping:
  • 1 1/2 cups all purpose flour
  • 3/4 cups sugar
  • pinch of salt
  • 1 1/2 sticks chilled butter, cubed
  • Filling:
  • 2 large eggs
  • 1 cup sugar
  • 1/2 cup sour cream
  • 1/3 cup all purpose flour
  • pinch of salt
  • 3 cups fresh blueberries
Crust and Topping:
Preheat the oven to 350 degrees.

Grease a 8x11 glass baking dish. In a large bowl, combine flour, sugar, salt and cubed butter with an electric mixer until you reach a crumbly consistency.

Set aside 3/4 cup of the mixture for the topping, and press the rest of the crust mixture into the bottom of the glass baking dish.

Bake for 15 minutes or until golden brown. Remove from the oven and set aside while you make the filling.

Whisk the eggs in a large bowl. Add sugar, sour cream, flour & salt.

Gently stir in the blueberries. Spoon the mixture evenly over the crust. Sprinkle the reserved crust evenly over the filling.

Bake for 45-55 minutes or until the top is lightly browned. Cool for 1 hour before serving.

  18. I cannot wait to try this recipe in the summer time. Seems like a perfect summer night dessert :) Thanks for posting it!

  19. Will frozen blueberries work in this recipe?

    1. I'm not sure how frozen blueberries will work. I'm not much of a baker, but I think it might be too runny using frozen. If you try it, let me know how it turns out!

    2. I used frozen blueberries in this recipe and the bars turned out great! I did bake them a bit longer though, about 65 minutes, but I also had the oven temperature at 325°F. These are delicious! And so much easier than making a pie!

    3. Thanks so much for letting me know how it turned out using frozen blueberries! I really love how easy this recipe is. I'm not much of a pie maker :)

  20. Sounds amazing Sheena, pinning :)

  21. I made these earlier this week and loved them! That is really saying something too, because I don't like blueberries at all. I made them for a school event, and wasn't even going to try one bc I don't like blueberries, but they looked so good that I couldn't resist. I'm glad I didn't because I loved them! My husband and kids did too. Thanks for sharing.

  22. I love blueberries. This looks so good. I will have to try it.
