Mmmmm, roasted chicken and potatoes are one of my absolute favorite types of comfort food. One of my favorite things about this recipe, is the addition of rosemary. There's just something about rosemary that's so comforting to me. Yummy. I just love how fast the prep is. After you prep, can just throw it in the oven, and forget about it until it's finished. Easy peasy! Enjoy!


Roasted Garlic Rosemary Chicken and Potatoes

Ingredients
  • 2 chicken leg quarters
  • 5 medium sized red potatoes, washed and cut into bite sized chunks
  • 2-3 tablespoons olive oil
  • 5 cloves garlic, sliced
  • 1 teaspoon dried rosemary
  • 1 tablespoon lemon juice
  • salt and pepper, as desired
Instructions
Preheat oven to 375 degrees.
Place chicken and potatoes in a glass baking dish, sprinkle with salt and pepper. In a bowl, combine olive oil, garlic, rosemary and lemon juice. Drizzle olive oil mixture over potatoes and chicken. Rub the oil mixture onto chicken and stir the potatoes to coat.
Bake for 1 hour to 1 hour 15 minutes or until chicken is cooked through.
