Hello foodies!! I hope this Monday has been good for you! I have a fun and easy weeknight recipe for you today. I'm a huge ground beef lover and we have an awesome meat market about a half an hour away called Thielen's Meats in Little Falls, where I buy all of my ground beef. They have great quality foods and great prices!
This recipe turned out so good for us! I just love all of bacon cheeseburger flavors, and it would be so fun to play around and add in any of your favorite burger toppings. I love pickles, so that was a must add for me. The pickles added a ton of flavor. I hope you enjoy this as much as we did. Until next time... :)
Bacon Cheeseburger Roll (print recipe)
What you need:
1 pound lean ground beef
6 slices bacon, cooked and crumbled
1/2 cup onions, chopped
3 pickle spears, seeded and chopped
1/4 pound velveeta, cubed
1/2 cup shredded cheddar cheese
1- 13.8 ounce refrigerated pizza crust
ketchup and mustard for serving
Directions:
Preheat oven to 400 degrees. Cook ground beef, bacon and onions in a large skillet on medium high heat until ground beef is cooked through. Drain, and return to skillet. Add velveeta and shredded cheddar, heat until melted. Stir in pickles.
Unroll the pizza dough on a cooking sheet sprayed with cooking spray. Press into a 15x8 inch rectangle. Spread meat mixture down the center lengthwise, and fold both outside edges into the center, pressing the seams together on top and ends to seal. Use a knife and cut a couple slits in the top. Some liquid may seep out during cooking.
Bake 20- 25 minutes or until golden brown. Cut into slices to serve!

My mom made something like this. She spread the ground meat mixture on top of a loaf of French bread (split in half) and cooked it in the broiler to heat through and melt the cheese. I hadn't though of that in forever. Thanks for sharing.
