Sheena's sister Shannon here with a amazing dessert that you absolutely must make this holiday season!
Sheena came down to stay with my family for the Thanksgiving weekend and we started to get into the holiday spirit!
We were super excited to make a seasonal recipe that was super cute for this time of the year.
We then decided to make some super yummy homemade brownies with a delicious peppermint filling, topped with a decadent chocolate ganache!
These beautiful morsels of goodness are just heavenly and will please any mint lover in your life! So perfect for any holiday celebration, party or just because!
You can also serve them for any other holiday. Just change the color of the peppermint layer and sprinkle the appropriate color sprinkles on top, or skip the sprinkles all together.
What are the ingredients in this recipe?
- Butter: A dairy product consisting of approximately 80% butterfat and made from the fat and protein components of milk or cream. Most commonly made from cow's milk, but can also be made from sheep, goat, yak, or buffalo milk.
- Heavy Cream or Whipping Cream: Heavy cream and heavy whipping cream are pretty much the same thing. Both must contain at least 36% or more milk fat. Heavy cream will whip better and hold its shape longer than whipping cream. Whipping cream, or light whipping cream, is lighter and contains around 30-35% milk fat. A common use for whipping cream is making a whipped topping for desserts. It is also used as an ingredient in recipes for soups, sauces and beverages.
- Vanilla extract: this extract is made from vanilla bean pods soaked in water and alcohol. Try using pure vanilla extract instead of imitation. This is the most common extract used in American desserts and I put it in pretty much anything sweet, Use store bought or make your own here!
- Powdered Sugar: Also known as confectioners' sugar or icing sugar. It is finely ground by milling, and is used for frostings or dusted onto food to add sweetness or decoration. You can use store bought or also make it yourself!
- granulated sugar
- unsweetened cocoa powder
- large eggs
- all purpose flour
- salt
- semi-sweet chocolate chips
- powdered sugar
- cream cheese
- imitation peppermint extract
- green food coloring
Recipe tips:
- How long to bake brownies since sometimes ovens temps vary? You want a toothpick to come out with crumbs attached. If you test them in one or two spots and the toothpick is coated with wet batter, they aren’t done yet. I would rather have these on the extra fudgy side than have them turn out over baked and dry.
- Store in an airtight container in the fridge for up to 4-5 days.
- Skip the green food coloring if you prefer. A white layer would look just as pretty!
- One thing I have found is that brownies baked in a metal pan tend to bake faster than when using a glass pan. If you're using a metal pan, reduce the cooking time by 5 minutes.
- These brownies need to chill in between adding each layer so that the layers don’t run into each other. The crushed candy canes should be added at the same time that you spread on the chocolate, that way they’ll adhere properly.

This recipe is ready in these steps:
- Brownies:
- Preheat the oven
- Grease a glass baking dish
- Add butter, sugar, cocoa powder and vanilla to a bowl
- Mix on low until combined
- Add the eggs one at a time, mixing well after each one
- Add flour and salt. Stir until combined
- Stir in chocolate chips
- Pour batter into pan and spread evenly
- Bake for 30ish minutes. Do not over bake
- Cool brownies completely
- Mint Filling:
- Add all ingredients to a bowl and beat until smooth and fluffy
- Spread filling over cooled brownies
- Put in the refrigerator until the filling is thick and set
- Chocolate Ganache:
- Put all ingredients in a microwave safe bowl
- Microwave until the chocolate chips start to melt
- Take out and stir until it's somewhat smooth
- Put back in microwave for approximately 30 second longer
- Pour ganache over the mint filling and smooth out
- Sprinkle optional crushed candy canes on top of the ganache
- Put assembled brownies in the refrigerator until completely set
- Cut with a sharp knife and enjoy

- 1 cup butter, melted
- 2 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 2 teaspoons vanilla extract
- 4 large eggs
- 1 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- Mint Filling
- 1 1/2 cups powdered sugar
- 2 tablespoons butter, softened
- 4 ounces cream cheese, softened
- 1/2 teaspoon peppermint extract
- 3 drops green food coloring
- 3 tablespoons heavy whipping cream
- Chocolate Ganache
- 1/2 cup heavy whipping cream
- 1 1/2 cups semi-sweet chocolate chips
- 6 tablespoons butter
- Optional: Candy Canes, crush and sprinkled on top of ganache
