How many of you love one pot pasta recipes? I sure do! They are easy, flavorful and on the table within a half hour! Definitely our kind of meal here at Hot Eats and Cool Reads!


This Beefy Black Bean Taco One Pot Pasta has tons of taco goodness all in one bowl! It's saucy, filling and with all these flavor components, a great meal! Black beans are my favorite, so I had to add some of those in and I topped it off with some sliced green onions!

I also really love ground beef! My favorite central MN meat market is Thielen Meats in Little Falls and they recently had their ground beef sale! This sale doesn't happen very often and you have to purchase 10 pounds to get the deal. I always make sure to drive there, even though it's about 40 minutes from my house and stock up! This is seriously some of the best ground burger you can buy and it's so worth the trip! They also have some awesome beef jerky, beef sticks and smoked pork chops! If you're ever driving through Little Falls on Hwy 10, make sure to stop in! The incredible smell when you walk in the door is worth the stop!

Beefy Black Bean Taco One Pot Pasta

Ingredients (2-3 servings)
  • 3/4 pound ground beef
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 1/3 cup bell pepper, diced
  • 3 cups beef broth
  • 1- 10 ounce can diced tomatoes with green chiles
  • 1- 15 ounce can black beans, drained and rinsed
  • 8 ounces mafalda pasta
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • salt and pepper, as needed
  • 1 cup shredded cheddar cheese
  • 1-2 tablespoons cilantro, chopped
Instructions
In a large skillet, brown ground beef, garlic, onion and bell pepper until beef is cooked through.
Add the broth, diced tomatoes with juice, black beans, pasta, seasonings, salt and pepper. Bring to a boil, then cover. Cook for about 9 minutes, until pasta is tender and sauce has thickenen, stirring occasionally. Stir in cheddar and cilantro. Remove from heat and set aside for 2-3 minutes before serving.
