We've been back in school for a couple weeks now, and our weeknights are busy as ever with school related activities and homework! Nights like these call for easy meals and I have a perfect easy meal recipe for you today! Chicken Parmesan Zucchini Boats!


What makes this meal especially easy, you ask? I used Tyson® Grilled and Ready® Chicken Breast Strips as a shortcut instead of spending the extra time cooking chicken breasts. They are SO tasty!

Before I left the house this morning, I put the Tyson® Grilled and Ready® Chicken Breast Strips in the fridge. They were thawed by the time I got home from work, and I started prep on the rest of the ingredients! This meal is ready in under 30 minutes and the flavors are mouthwatering! Kids love this meal because it mimics the flavors of spaghetti and pizza, and it's so good for you using the zucchini as the boat to hold everything! You'll want to add this to your regular recipe rotation! Enjoy!


Chicken Parmesan Zucchini Boats

Ingredients (4 servings)
  • 2 medium zucchini, halved and seeds removed
  • 1 cup Tyson® Grilled and Ready® Chicken Breast Strips, diced
  • 1/4 cup plus 2 tablespoons marinara sauce
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1/4 cup shredded mozzarella cheese
  • 1 1/2 tablespoons Italian style bread crumbs
  • 1/1 2 tablespoons shredded parmesan cheese
  • black pepper
Instructions
Preheat oven to 400 degrees. Cover a baking sheet with aluminum foil and place zucchini halves on baking sheet.
In a bowl, combine Tyson® Grilled and Ready® Chicken Breast Strips, sauce, garlic, basil, mozzarella cheese and black pepper. Scoop into halved zucchini.
In a separate bowl, combine the bread crumbs and parmesan, then scoop over top of chicken mixture in zucchini halves.
Bake for 20-25 minutes, broiling for the last couple minutes to brown top. Remove from oven and serve immediately.
