My daughter starts 4th grade on August 10th! With back to school, I'm always searching for easy meal options for those busy school nights.
Pasta with red sauce happens to be a go to meal in our family, and when I'm not making sauce from scratch, I tend to turn to one of my favorites, Prego Italian Sauce!
Prego has that homemade Italian American taste without all the extra effort. It's sweet and savory flavors are perfect for the whole family to enjoy. I love that it's ready in minutes!
With the help of my slow cooker and some other simple ingredients, I turned this traditional sauce into something extra spectacular!
This Slow Cooker Tuscan Chicken has beans, olives, artichoke hearts, along with fresh basil, parsley, garlic and onions! We love serving it over cavatappi pasta!
The chicken is nice and tender after slow cooking and the flavors from all the herbs and veggies really takes that sauce to the next level!
The best part about this recipe? The prep is minimal.
I'm all about prepping the weekend or night before. Cook up the pasta, store in the fridge and reheat right before serving.
You can also save time by chopping the other ingredients ahead of time, that way they're ready to just toss in the slow cooker!

I set mine to high for four hours with this recipe and when the time is up it automatically switches over to the keep warm setting so your food is perfect and not overcooked by the time you get home!

Slow Cooker Tuscan Chicken with Pasta

Ingredients
- 2 pounds boneless skinless chicken breasts
- 1- 24 ounce jar Traditional Prego
- 1- 7.5 ounce marinated artichoke hearts, drained and chopped
- 1 medium onion, finely diced
- 4 cloves garlic, minced
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1- 2.25 ounce sliced black olives, drained
- 1/2 cup cannelli beans, drained and rinsed
- 8 ounces cavatappi pasta
- salt and pepper
Instructions
Season chicken breasts with salt and pepper, set aside.
Pour the Prego sauce into the slow cooker. Add artichoke hearts, onion, garlic, basil, parsley, black olives and cannellini beans evenly over the sauce. Place seasoned chicken breasts over top.
Cook on high for 4 hours, or low for 6-8 hours.
20 minutes before sauce is ready, cook cavatappi pasta according to package directions.
Remove chicken and slice, then return to slow cooker and add pasta. Stir to combine.
Or, slice chicken then place noodles on a plate, top with sauce and sliced chicken.
