  2. Preheat oven to 375 F degrees.
  3. Mix seasonings together in a small bowl and massage into the pork loin roast.
  4. Add pork loin to a baking dish with the fat cap facing up.
  5. Cook the pork loin until it reaches a temperature of 145 F degrees, about 60 minutes.
  6. Remove the pan from the oven and transfer the pork to a clean cutting board and allow to rest for 10 minutes.
  7. Slice the pork loin crossways into ¾ to 1 inch slices and serve with a drizzle of the pan drippings.
