I'm so excited to share one of our party favorites with you today! This heavenly and addicting Ice Cream Sandwich Cake is such a crowd pleaser. Everyone loves it and it's so easy to assemble.

The ice cream sandwiches and whipped topping make this cake so simple. It only has 5 ingredients total, including the M&M's, chocolate and caramel syrups. 

You can assemble this cake ahead of time. It stores well in the freezer and is ready to go when needed. Kids and adults love this simple cake, making it a great dessert for any summer celebration. It's also great for game day parties, especially when you decorate it with the colors from your favorite team.

It's such an affordable option when you don't want to spend the money on a store bought ice cream cake.

  • It’s best to keep the ice cream sandwiches in the freezer until it’s time to assemble the cake, you want them as frozen as possible so they hold their shape.
  • This cake can be frozen for up to two months.

Ice Cream Sandwich Cake

Ingredients

  • 24 ice cream sandwiches, unwrapped
  • 1 -16 ounce container Cool Whip, thawed
  • 1/2 cup chocolate syrup, or more if desired
  • 1/2 cup caramel syrup, or more if desired
  • M&M’s, for topping

Instructions

  1. In a 9x13-inch pan, place 12 of the ice cream sandwiches in a single layer on the bottom.
  2. Scoop half of the Cool Whip onto the ice cream sandwich layer and spread out evenly.
  3. Drizzle the chocolate syrup and caramel syrup over the Cool Whip.
  4. Add the remaining 12 ice cream sandwiches in a single layer, then drizzle on more chocolate syrup and caramel syrup.
  5. Scoop the rest of the Cool Whip on top of the cake and spread out evenly.
  6. Cover the cake with plastic wrap and freeze for at least 3 hours until completely firm.
  7. Drizzle more chocolate and caramel syrup over top of the cake, then sprinkle with M&M’s.
  8. Cut the cake and serve frozen.
