An Easter celebration wouldn't be complete without this fun and tasty Peeps Poke Cake!

It's so easy to change out the colors to your favorites, use different Peeps, sprinkles, etc. This poke cake has 16 servings, but you can always cut it into smaller pieces to feed a bigger crowd.

The cheesecake pudding adds a delicious flavor to each bite. It's used in the cake and the frosting, so if your family loves the flavor of cheesecake, they'll love this cake too!

Recipe tips:

  • You'll want the holes to be fairly big and poked down to the bottom of the cake so that the pudding has plenty of room to fill the holes.
  • Make sure to pour the pudding over the cake right away. Once it sets, it will not fill the holes easily.

Peeps Poke Cake

Ingredients

  • 1 - 15.25 ounce box white cake mix + ingredients listed back of the box
  • 2 - 3.4 ounce packages of cheesecake instant pudding
  • 2 ¾ cups of milk, divided
  • 3 tablespoons powdered sugar
  • 8 ounces whipped topping
  • pink and green gel food coloring
  • green sprinkles, for topping
  • peeps marshmallows, for topping
  • Easter peanut M&Ms, for topping

Instructions

  1. Cake:
  2. Prepare the white cake mix and bake according to package directions. Remove from oven and cool.
  3. Once the cake has cooled use the thin end of a wooden spoon to poke holes throughout the cake.
  4. In a large mixing bowl, whisk together one package of the cheesecake pudding mix with 2 cups of milk. Whisk in 6-7 drops of pink food coloring, adding more if necessary, to get your desired shade of pink.
  5. Quickly pour the pudding mixture into the holes you poked in your cake, and smooth out over the top of the cake.
  6. Move the cake to the refrigerator to chill for 2-4 hours, so the pudding can set.
  7. Frosting:
  8. In a large mixing bowl whisk together one package of cheesecake pudding, ¾ cup of milk and powdered sugar until smooth.
  9. Fold in cool whip, stirring until everything is well combined.
  10. Add 4-5 drops of green food coloring, and stir until combined and there are no more white streaks. Add more food coloring, if needed, to get to your desired shade of green.
  11. Frost the top of the cake, and then top with green sprinkles, Peeps and Easter M&Ms.
