If you love slow cooker meals, this recipe is for you! Macaroni and cheese is always a family favorite, but this taco mac and cheese takes it to a whole new level. It's loaded with elbow macaroni, cheese, ground beef, taco seasoning and more. You can use store bought taco seasoning, or give my homemade taco seasoning a try!
This recipe is super easy when you cook the macaroni and ground beef ahead of time and refrigerate until needed. You can change the shredded cheese you use, try ground turkey and so much more. It's easy to customize and make it exactly how your family loves.
You can serve it for Taco Tuesday and top with your favorite taco toppings. It's budget friendly and family friendly. We sometimes serve it with a side salad instead of taco toppings.
I don't like mushy pasta and this macaroni comes out perfect. It's slightly undercooked before you add it to the slow cooker so it doesn't get overcooked.

You can add or substitute with these ingredients:
- use ground turkey instead of ground beef
- add diced onion with the ground beef
- use pepper jack cheese instead of cheddar
- add minced garlic with the ground beef
- add crushed red pepper with the ground beef
- add diced bell pepper with the ground beef
- use cooked, diced chicken breast instead of ground beef
Recipe tips:
- I recommend using freshly shredded cheese for better taste and melt.
- This recipe can be topped with all of your favorite taco toppings if desired.
- Refrigerate leftovers in an airtight container for up to three days.
Slow Cooker Taco Mac and Cheese
Ingredients
- 1 - 16 ounce package elbow macaroni
- 1 ½ pounds ground beef
- 1/4 cup taco seasoning
- 2 ½ cups shredded cheddar cheese
- 1 - 10 ounce can tomatoes with green chiles, drained
- 4 ounces cream cheese, cubed
- 8 ounces velveeta cheese, cubed
- ½ cup sour cream
- 2 cups milk
- salt and black pepper, to taste
- non-stick cooking spray
Instructions
- Prepare a slow cooker with nonstick cooking spray.
- Cook the elbow macaroni according to package directions until al dente, boiling for about 6 minutes.
- Meanwhile, in a medium skillet over medium high heat, brown the ground beef, crumbling as it cooks. Drain the ground beef, then stir the taco seasoning into the ground beef.
- In the slow cooker, add the cooked macaroni, seasoned ground beef, 2 cups shredded cheese, tomatoes with green chiles, cream cheese, velveeta, sour cream, milk, salt, and black pepper. Stir to evenly distribute the ingredients.
- Cover the slow cooker and cook on low for 3 hours, stirring every hour. Prior to serving, top with the remaining cheese. Re-cover until the cheese melts and serve.
