We are obsessed with these Cheesy Broccoli Bites at our house! Ready in about 20 minutes and only three ingredients, these are so easy to make any day of the week.

Kids love them because they're cheesy, and I love the crispy texture of the broccoli and cheese. They go great with chicken, pork or beef. They're also a great addition to a meatless meal.

The combo of parmesan and cheddar cheese is perfect and adds so much flavor to the broccoli without adding any extra seasoning. 

They're also great to make ahead and pack in a lunchbox. Reheat if you have a microwave, but they surprisingly taste great cold too. I may or may not have eaten some right from the refrigerator.

You can add or substitute with these ingredients:


  • use cauliflower instead of broccoli
  • add some crushed red pepper flakes
  • add some dried thyme, rosemary, oregano or basil
  • add some onion and/or garlic powder
  • use a combo of broccoli and cauliflower


Recipe tips:

  • Don't skip squeezing out the excess liquid. This helps the broccoli to get nice and crispy. It adds so much extra flavor.
  • Don't skip the parchment paper. This will ensure the cheese won't stick to the baking sheet.

Cheesy Broccoli Bites

Ingredients

  • 1 - 12 ounce package frozen broccoli
  • 1/4 cup shredded parmesan cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Cook broccoli according to package directions. Drain in a colander, and squeeze out any excess water.
  3. Divide and place broccoli into 8 piles on a parchment lined baking sheet. Flatten each pile, then sprinkle evenly with the parmesan cheese and cheddar cheese.
  4. Bake for 20-25 minutes, until cheese starts browning and the edges are crispy.
