This Slow Cooker Beef Stir Fry can be thrown together in just a few minutes, then you let the slow cooker do all the work for you!

It's flavorful, saucy, full of veggies and since the beef is so thinly sliced, it ends up being fall apart tender. This recipe would be great to meal prep for lunch or dinner.

You can add or substitute with these ingredients:


  • use thinly sliced chicken or pork instead of beef
  • use fresh vegetables instead of frozen (cooking time may need to be increased)
  • use fresh ginger instead of ground
  • use frozen broccoli instead of a vegetable blend
  • add cabbage
  • use teriyaki sauce instead of soy sauce


Recipe tips:

  • If you prefer a thicker sauce, combine cornstarch and cold water. Stir into the cooked beef and vegetable mixture. Cover and cook for another 5-10 minutes, until thickened.

Slow Cooker Beef Stir Fry

Ingredients

  • 1 pound thinly sliced beef
  • 1 tablespoon cornstarch
  • 6 cloves garlic, minced
  • ½ cup brown sugar
  • ½ cup soy sauce
  • 4 teaspoons sesame oil
  • ½ teaspoon ground ginger
  • ¼ teaspoon crushed red pepper
  • 1/2 teaspoon black pepper
  • 8 cups frozen stir fry vegetables
  • salt, to taste
  • ¼ cup sliced green onions

Instructions

  1. Prepare a slow cooker with nonstick cooking spray.
  2. Place the beef and cornstarch into a ziploc bag. Toss the beef to coat evenly. Transfer the beef to the slow cooker.
  3. In a small bowl, mix together the garlic, brown sugar, soy sauce, sesame oil, ginger, crushed red pepper, and black pepper. Pour the mixture over the beef. Top the beef with the vegetables.
  4. Cover the slow cooker and cook on low for 4 to 6 hours or until the vegetables are tender. Stir, then add salt, if desired.
  5. Serve over rice or pasta and garnish with green onions.
