  • For the best texture and flavor, dice or shred the vegetables finely so they cook quickly and mix evenly with the turkey. Freshly grated garlic and ginger add the most flavor, and it’s best not to overcook the turkey so it stays tender and juicy. Taste the sauce before adding it to the skillet and adjust if needed with a little more hoisin for sweetness or soy sauce for saltiness. Prepare the lettuce leaves ahead of time by gently separating and rinsing them, and for extra crunch, consider topping the wraps with chopped peanuts, sesame seeds, or crispy wonton strips.
  • Ground chicken, beef or ground pork can be used instead of ground turkey, and romaine or iceberg lettuce works if butter lettuce isn’t available. If you don’t have fresh garlic, ginger, or onion, you can substitute garlic powder, ground ginger, and onion powder, though the flavor won’t be quite as bold as using fresh ingredients. You can also swap the bell pepper and carrots for other vegetables like shredded cabbage, zucchini, or water chestnuts for extra crunch. Turkey Lettuce Wraps

A quick and healthy meal made with ground turkey, bell peppers, carrots, and a sweet-savory sauce. These lettuce wraps are fresh, flavorful, and easy to make on busy weeknights.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 small onion, finely diced
  • 1 pound ground turkey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, diced
  • 1 cup shredded carrots
  • 3 tablespoons lower sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon seasoned rice vinegar
  • 1 teaspoon sesame oil
  • ¼ teaspoon crushed red pepper
  • 4 green onions, sliced
  • 1 head butter lettuce, leaves separated

Instructions

  1. Heat the vegetable oil in a large skillet over medium high heat. Add the onion and cook for 3-4 minutes, until softened.
  2. Add the ground turkey, garlic, and ginger. Cook, breaking up the meat, until browned and fully cooked.
  3. Stir in the bell pepper and carrots and cook for another 2-3 minutes, until slightly tender.
  4. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, and crushed red pepper.
  5. Pour the sauce into the skillet and stir to coat the turkey mixture evenly. Cook for another minute until heated through.
  6. Remove from heat and sprinkle with green onions.
  7. Spoon the turkey mixture into lettuce leaves and serve immediately.
