Recipe tips:
- If the sauce looks slightly separated after cooking, simply whisk or stir it well after shredding the chicken until it's smooth and creamy again. Cook the chicken just until it reaches 165°F to keep it tender and juicy, as overcooking can cause it to become dry.
- Cook the angel hair pasta just until al dente since it will continue to soften slightly once topped with the hot sauce. Reserve a little pasta water in case you'd like to thin the sauce before serving. Store leftovers in an airtight container in the refrigerator for up to four days, or freeze the chicken and sauce (without the pasta) for up to three months for an easy future meal.
Swaps and additions:
- Boneless, skinless chicken thighs or boneless pork chops or ribs can be used instead of chicken breasts. Swap the cream of chicken soup for cream of mushroom or cream of celery soup for a slightly different flavor, and use your favorite pasta if you don't have angel hair, fettuccine, linguine, spaghetti, or egg noodles all work well.
- For extra flavor and texture, stir in sautéed mushrooms, spinach, sun dried tomatoes, or steamed broccoli during the last 15-20 minutes of cooking. Sprinkle freshly grated Parmesan cheese over each serving, or garnish with chopped fresh parsley or basil. If you'd like a little heat, add a pinch of crushed red pepper flakes or a dash of cayenne to the sauce. You can also substitute reduced fat cream cheese for a lighter version.
