Happy Saturday everyone! I hope everyone had a wonderful week! Ours was pretty eventful! I started Zumba on Thursday night and boy, am I still sore today! It was such a fun and exciting workout though and I'm super excited to go back next week!
I also attended a local Young Living event last night! It was SO informative and interesting and makes me excited to continue on my oily journey! I posted a new recipe for Pan Fried Tilapia with Lemon Cream Sauce over at my new blog, Mama Loves Her Oils! The sauce is made with lemon essential oil and is amazing! Today's post is one tasty sandwich! Who's a huge Trader Joe's fan like me?? In their bakery section they have these delicious Garlic Parmesan Baguette, and that was my inspiration for this sandwich! If you don't have access to Trader Joe's, any baguette or bread would work great!
I also love tomato basil everything, so why not combine those flavors into a simple egg salad sandwich? It turned out fantastic! The flavors were all delicious together, and the sandwich serve with some fruit or chips was a great, light lunch!
Tomato Basil Egg Salad Sandwich
- 3 inch piece garlic parmesan baguette or any bread of your choice
- 1 hard boiled egg
- 1 tablespoon mayo
- 1 fresh basil leaf, chopped
- 4 grape tomatoes, quartered
- salt and pepper, as needed
Slice baguette in half lengthwise.
In a bowl, smash hard boiled egg with a fork to desired consistency. Mix in the mayo, basil, tomatoes, salt and pepper until combined. Scoop onto baguette and serve immediately!
