I have so many favorite summer foods, but garden fresh tomatoes are always at the top of my list! Cherries, kohlrabi, and sweet peas aren't far behind.

I grew up with my dad tending a huge garden every year, and I know that's where my love of fresh food began. There was always something growing, and I have so many great memories of picking vegetables straight from the garden and bringing them into the kitchen.

These days, I don't have a lot of extra space or time for a garden of my own, but I'm lucky to have some wonderful options nearby. We have a fantastic farmer's market just a few miles away in downtown St. Cloud, and the nonprofit I work for has a thriving community garden. Having access to fresh, local produce makes summer cooking even more enjoyable.

If you're a tomato lover, today's recipe is for you! This Tomato Vinaigrette is packed with fresh tomato flavor and gets an extra boost from garlic. The combination is tangy, rich, and incredibly flavorful while still being light enough for summer salads.

I especially love it drizzled over spinach salads, but it's also delicious on mixed greens, grain bowls, or even spooned over grilled vegetables. The best part is how quickly it comes together. Homemade dressings are so simple to make, yet I still find myself reaching for store bought bottles more often than I should.

Both of my daughters and I love vinaigrettes, so I'm making it a goal to experiment with more homemade versions this year. There are so many flavor combinations to try, and this tomato version is definitely staying in the rotation.

And if garden tomatoes aren't available, I highly recommend Campari tomatoes. They're one of my favorite store bought varieties because they have a sweet, rich flavor that's surprisingly close to garden fresh. They're usually reasonably priced too, making them a great budget-friendly option when you're craving summer tomato flavor.

Recipe tips and substitution ideas:


  • For the best flavor, allow the vinaigrette to chill for at least 30 minutes before serving. This gives the ingredients time to blend and creates a more flavorful dressing. If you prefer a smoother vinaigrette, use a food processor or immersion blender to blend the ingredients until smooth. Fresh, ripe tomatoes will give you the best flavor, especially during the summer months. If garden tomatoes aren't available, Campari tomatoes are a great store bought option because they're sweet, juicy, and full of flavor. Be sure to whisk the vinaigrette again before serving, as the ingredients may separate while chilling. You can also adjust the vinegar, garlic, or seasonings to suit your personal taste preferences.
  • This vinaigrette is easy to customize based on what you have on hand. If you don't have Campari tomatoes try using grape tomatoes, cherry tomatoes or any tomato you have on hand. For the vinegar, red wine vinegar, seasoned rice vinegar, apple cider vinegar, or balsamic vinegar can be used depending on your taste preferences. Balsamic or rice vinegar will create a sweeter, richer dressing, while red wine vinegar adds a bright, tangy flavor. Feel free to swap the olive oil for avocado oil if desired. You can also add fresh herbs such as basil, parsley, oregano, or chives for extra flavor and freshness. If you enjoy a little heat, add a pinch of crushed red pepper or a diced jalapeño. For a touch of sweetness, stir in a small amount of honey or maple syrup to balance the acidity of the tomatoes and vinegar.
  • Refrigerate in the refrigerator in a jar or airtight container for up to four days.

Tomato Vinaigrette

This Tomato Vinaigrette is quick to make and packed with fresh, savory flavor in every bite. Made with simple ingredients, it's a delicious way to enjoy peak-season tomatoes.

Ingredients

  • 1 clove minced garlic
  • 6 campari tomatoes, seeded and finely chopped
  • 3 tablespoons white wine vinegar
  • 1 teaspoon paprika
  • 1/4 cup extra virgin olive oil
  • pinch of salt and black pepper

Instructions

  1. In a small bowl, whisk together the garlic, tomatoes, vinegar, paprika, olive oil, salt, and black pepper until well combined.
  2. Cover and refrigerate for at least 30 minutes to allow the flavors to blend. Whisk again before serving.
