I am SO excited to share this recipe with all of you today!

This has been a family favorite for almost a year and I can't believe it hasn't made an appearance here on the blog yet.

We had a visitor from Burkina Faso last summer and this was the first meal she prepared for our family after she arrived.

It's so simple, but yet so flavorful for the minimal ingredients it has!

This dish really makes you appreciate how simple and delicious a meal can be without all the added herbs and seasonings!

Another reason I really love this meal? The ingredients can usually be found in my fridge, freezer and pantry!

I buy all of our ground beef in bulk at Thielen Meats in Little Falls, Minnesota. It's usually 10 or 20 pounds at a time and I wrap it up in freezer paper to save money on buying it pre-packaged.

It's seriously the best ground beef around!

We also serve this meal with fried plantains for a special treat, but it's totally filling without them too!

This dinner totally reminds me of grandma's meat and potatoes comfort food and if you have leftovers, they taste wonderful for lunch the next day.

My eleven year old, Ella requests this weekly for dinner.

I'm always more than happy to make it because I know she's getting much needed protein and some veggies too!

She's not usually much of a meat eater, but loves her vegetables, especially onions. I love that she loves them, because I put onions in pretty much everything I make.

Ground Beef and Vegetables with Garlic Seasoned Potatoes

Yield: 4 servings

ingredients:

  • 6 large potatoes, peeled and cut into bite sized pieces
  • 1/2- 3/4 teaspoon garlic salt
  • 1 pound lean ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 3 large carrots, peeled and cut into bite sized pieces
  • 6 campari tomatoes, diced
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper
  • chopped fresh parsley, optional for garnish

instructions:

  1. Place potatoes in a large saucepan and cover with water. Bring to a boil, cover and cook until potatoes are tender. Drain and toss with garlic salt to season.
  2. Meanwhile, brown ground beef, onions and garlic over medium high heat until ground beef is cooked through. Drain, if needed.
  3. Add olive oil, carrots, tomatoes, salt and pepper. Cover and simmer over medium heat for 20 minutes.
  4. Serve ground beef over potatoes and sprinkle with fresh parsley.
