It's a snowy day here in Minnesota! I'm enjoying the view from inside my warm house with the delicious smell of a beef roast simmering in the slow cooker.

I love days at home like this when it's chilly and snowy outside and I don't have to go anywhere.

Days like today are also great for baking, and today's recipe is a wonderful one to try.

I've been getting berries super cheap at the grocery store lately and ended up having an abundance of blueberries and strawberries.

My daughter wanted to get in the kitchen and do some baking so we decided to give this cake a try!

Each bite of the cake has some berries, which I love and the crunchy crumble on top makes this cake perfection.

I really love coffee cake for breakfast or brunch, but it's also a great dessert for any occasion, especially with all these lovely berries.

My daughter who's almost 11 loved making this cake and it was simple enough for her to take the lead and me to help out whenever she needed it.

This cake is defintely a new favorite and we will be making it again with different flavor combos!

What is in Strawberry and Blueberry Coffee Cake?

  • Preheat oven and grease a glass square baking dish
  • To prepare the streusel, add the flour, brown sugar, cinnamon and butter to a bowl, mix
  • To make the cake batter, beat the sugar and butter until fluffy
  • Add the sour cream and milk, and mix
  • Then add egg and vanilla extract and mix
  • Combine flour and baking powder in a bowl, then add the dry ingredients and mix
  • Spread half the cake batter into the pan. 
  • Top the batter with half the berries and half the streusel, then spread the remaining cake batter
  • Sprinkle remaining berries and streusel over top
  • Bake
  • Remove cake from oven and cool

Strawberry and Blueberry Coffee Cake

Ingredients:

  • Streusel:
  • 1/2 cup all purpose flour
  • 1/2 cup packed brown sugar
  • 3/4 teaspoon cinnamon
  • 4 tablespoons butter, melted
  • Cake:
  • 1/2 cup granulated sugar
  • 6 tablespoons butter, room temp
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 teaspoons baking powder
  • 1 cup all purpose flour
  • 1 1/4 cups fresh blueberries and chopped fresh strawberries

Instructions:

  1. Preheat oven to 350 degrees. Grease an 8 inch glass square baking dish.
  2. To prepare the streusel, add the flour, brown sugar, cinnamon and butter to a bowl and mix with a fork until combined. Set aside.
  3. To make the cake batter, beat the sugar and butter until fluffy, about 3-4 minutes.
  4. Add the sour cream and milk, and mix well. Then add egg and vanilla extract and mix until smooth.
  5. Combine flour and baking powder in a separate bowl, then add the dry ingredients to the batter and mix well.
  6. Spread half the cake batter into the bottom of the pan. Top the batter with half the berries and half the streusel mixture, then spread the remaining cake batter over streusel.
  7. Sprinkle remaining berries and streusel over top of the cake batter. Bake for 40-45 minutes, until a toothpick inserted comes out clean.
  8. Remove cake from oven and cool for about 20 minutes before serving.
