Today's recipe is perfect to serve at your next game day party. If you're a buffalo chicken lover, then this recipe is for you! 

Cheesy, meaty goodness with a little heat! So heavenly and besides, who doesn't love dips? They are my favorite party food.

I love buying rotisserie chicken from my local Sam's Club to use in recipes like this. It's such a great time saving shortcut and budget friendly. 

After you pull off all the chicken, use the rest to make some delicious homemade chicken broth! One inexpensive chicken equals two or three recipes depending on what you make with it.

Baked or Slow Cooker Cheesy Buffalo Chicken Dip

Ingredients

  • 2 ½ cups cooked and shredded chicken
  • 16 oz cream cheese, softened
  • ½ cup ranch dressing
  • ½ cup hot sauce
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 teaspoon garlic powder
  • sliced green onion, hot sauce and crumbled blue cheese for garnish, optional

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine chicken, cream cheese, ranch dressing, hot sauce, 1 cup cheddar cheese and garlic powder.
  3. Stir well and transfer to a 10 inch cast iron skillet or similar size baking dish/dishes.
  4. Top with remaining 1 cup of cheddar cheese.
  5. Bake for 20 minutes or until cheese is melted and bubbly.
  6. Garnish with blue cheese, green onion and hot sauce, if desired.
  7. Serve with chips, vegetables, crackers.
  8. Slow Cooker instructions:
  9. In a slow cooker, combine chicken, cream cheese, ranch dressing, hot sauce, 1 cup cheddar cheese and garlic powder.
  10. Cover, and cook on low for 3-4 hours or high for 1-2 hours. Stir every 30 minutes. Cheeses will be fully melted and combined with the other ingredients when it's ready.
  11. Sprinkle the remaining 1 cup cheddar cheese on top, cover until cheese is melted.

Notes:

The leftovers can be stored in an air tight container in the refrigerator for 2-3 days. Reheat in microwave or oven.


It's not recommended to freeze this dip.
