Tender chicken legs cook low and slow in a sweet and tangy sauce made with pure maple syrup, Dijon mustard, brown sugar, apple cider vinegar, garlic, and simple seasonings. As everything cooks together, the sauce becomes rich and flavorful, coating every bite of chicken with the perfect combination of sweet, savory, and tangy flavors.
I especially love recipes like this on busy fall weeknights when we're running between work, school, and activities but I still want to put a cozy homemade dinner on the table. The maple flavor makes this chicken feel perfect for fall, while the Dijon mustard and apple cider vinegar balance the sweetness and give the sauce a delicious tangy kick. We love it served with mashed potatoes or rice to soak up all that extra maple Dijon sauce, along with green beans, roasted Brussels sprouts, or another favorite veggie. Recipe tips:
- For the best flavor, use pure maple syrup and not pancake syrup. Chicken legs release quite a bit of liquid as they cook, so there's no need to add broth or water. For golden, slightly crispy skin, transfer the cooked chicken to a baking sheet and broil for 2-3 minutes, watching it closely so it doesn't burn. Spoon some of the warm maple Dijon sauce over the chicken just before serving, or simmer the sauce separately for a few minutes if you'd like it thicker.
- Store leftovers with the sauce in an airtight container in the refrigerator for up to three days. To freeze, cool the chicken completely, transfer it with some of the sauce to a freezer safe container, and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
Swaps and additions:
- Chicken thighs can be used in place of chicken legs, and you can substitute whole grain mustard or spicy brown mustard for the Dijon for a slightly different flavor. Honey can replace the maple syrup, while coconut sugar or additional maple syrup can be used instead of brown sugar. Try adding some hot honey!
- For even more flavor, add sliced onions, shallots, fresh rosemary, thyme, or sage to the slow cooker. A pinch of crushed red pepper or cayenne adds a little heat, while smoked paprika gives the sauce a subtle smoky flavor. You can also add carrots, baby potatoes, or sweet potatoes to turn it into an even heartier one pot meal.

Slow Cooker Maple Dijon Chicken
These tender Slow Cooker Maple Dijon Chicken Legs are coated in a sweet, tangy sauce made with maple syrup, Dijon mustard, garlic, and brown sugar. With just a few minutes of prep, this flavorful chicken dinner practically cooks itself.
Ingredients
- 8 chicken legs
- 1 teaspoon seasoned salt
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- ½ cup maple syrup
- ¼ cup Dijon mustard
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 2 tablespoons minced garlic
Instructions
- Place the chicken legs in the bottom of the slow cooker.
- In a medium bowl, whisk together the seasoned salt, black pepper, onion powder, maple syrup, Dijon mustard, brown sugar, vinegar, and garlic until well combined.
- Pour the maple Dijon sauce evenly over the chicken legs.
- Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, or until the chicken is tender and reaches an internal temperature of at least 165°F.
- For additional color and slightly crispy skin, transfer the cooked chicken legs to a baking sheet and broil for a few minutes, watching carefully to prevent burning.
- Spoon the warm sauce over the chicken legs before serving.
