If you're looking for a meatless main dish or a side for your favorite protein, this recipe is for you!

This simple fried rice is fast to make and such a family favorite! My oldest daughter requests this often. It's a great base recipe and you can add or switch out the vegetables, sauce, seasonings and make it a little different every time. 

It's a wonderful way to use leftover rice. I always make extra rice, just to have some leftover for this or rice pudding!


This fried rice is so amazing served with Baked Sweet and Sour Chicken, Salt and Pepper Chicken or Baked Teriyaki Chicken Wings!

You can add or substitute with these ingredients:


  • add chicken breast
  • use fresh basil or cilantro for garnish instead of green onions
  • add shrimp
  • use half soy sauce and half teriyaki sauce
  • add more or use less eggs
  • add chopped fresh mushrooms
  • use brown rice instead of white
  • add cubed ham
  • add grated fresh ginger
  • add crushed red pepper


Recipe tips:

  • Make sure to only use cold, leftover rice. Warm rice will become sticky and clump together. Cold rice will become nice and crispy! If you have freshly cooked rice, refrigerate for 15 minutes before using.
  • Make sure to have your skillet HOT before adding the veggies! This makes the best fried rice.
  • I use a non-stick skillet to make this since that's what I have. Feel free to use a wok or your favorite skillet. This recipe also works great on a Blackstone!

Fried Rice

Ingredients

  • 1 tablespoon olive oil
  • ½ cup diced onion
  • 1 cup frozen mixed veggies
  • 2 cups leftover cold rice
  • 2 cloves garlic, minced
  • 1 ½ tablespoons low sodium soy sauce
  • 2 large eggs
  • Sliced green onion for garnish, optional

Instructions

  1. In a large skillet, heat the olive oil over high heat. Add the onion and mixed veggies, cook stirring often to prevent burning, about 3 minutes.
  2. Add the rice and garlic, cook for 2 minutes, then add the soy sauce. Mix to combine, then reduce heat to medium and push rice to the sides of the skillet leaving a hole in the middle.
  3. Add the eggs to the middle of the skillet, then scramble until set. Increase heat back to high, then mix to combine and cook for another 2-3 minutes.
  4. Remove from heat, garnish with green onion and serve.
