
My sister Shannon is here visiting from Michigan right now and requested I make these Shredded Beef Tacos! It was such a fun evening! My Dad and Step Mom stopped by for dinner too and we ended the night with some yummy Mixed Berry Bellinis! I am also very excited because my sister is an amazing photographer and she took the pictures for this post!
I cannot believe I haven't made these tacos since I've started blogging. What other great meals have I forgot about? Time will tell! The beef is super easy to prep and they turn out so awesome! It's a great change from Ground Beef Tacos when you are wanting something a little different. I hope you enjoy this recipe as much as we did!
Slow Cooker Shredded Beef Tacos

Ingredients
- 3 pound beef roast
- 1 onion, diced
- 6 cloves garlic, minced
- 1 green, red or yellow pepper, diced
- 3 tbsp. cumin
- 1 1/2 tbsp. chili powder
- 1 tbsp. oregano
- 1 1/2 tsp. paprika
- 1/2 tsp. cayenne pepper
- 2 tbsp. chopped cilantro
- salt and pepper
- water
Instructions
Combine cumin, chili powder, oregano, paprika, cayenne, salt and pepper in a bowl. Rub half of the spice mixture onto the roast. Place the roast in the slow cooker and add onion, garlic and diced pepper and a 1/2 cup water.
Cook on low for about 8 hours. Drain some of the liquid, shred beef and put back into the slow cooker. Mix in remaining spice mixture, cilantro and more salt and pepper as needed. Cook on low for another half hour until heated through.
