I first served these Chicken and Broccoli Bites a couple years ago as an appetizer for my daughters birthday party. They were a huge hit with everyone and are perfect for game day parties or any celebration.

These bites would also make a great lunch or after school snack too. This recipe is so easy to customize. Change up the ingredients, use what you have on hand, for something different every time. 

The scoops chips are a perfect little cup to hold all of the chicken and vegetables and adds that much needed crunch!

You can add or substitute with these ingredients:


  • use cauliflower instead of broccoli
  • use your favorite spices or seasoning blends instead of dill, salt and pepper
  • use turkey instead of chicken
  • add shredded or diced cheese
  • use ham instead of chicken
  • use Frito Scoops instead of tortilla chips
  • use fresh dill instead of dried (fresh basil, rosemary or thyme would also be great)


Recipe tips:

  • You’ll want to dice your chicken and chop your broccoli in small enough pieces so they fit inside the chip.

Chicken and Broccoli Bites

Ingredients

  • 1 cup diced cooked chicken breast
  • 1 cup fresh chopped broccoli
  • 1/4 cup shredded carrots
  • 1/2 cup mayo
  • 1/2 teaspoon dried dill
  • pinch of salt
  • pinch of black pepper
  • 30 scoop shaped tortilla chips

Instructions

  1. In a medium bowl, add chicken, broccoli, carrots, mayo, dill, salt and pepper. Stir to combine.
  2. Cover and refrigerate for 30 minutes, or until serving.
  3. When you are ready to serve, scoop chicken mixture into each chip and serve.
